Recipe: Cinnamon Sugar Scones














I decided to dress up a plain scone recipe for our breakfast this morning. Enjoy!


Scones (Adapted from Kitchen Aid Baking Companion cookbook)
2 c flour
2 4 TBSP sugar
2 TBSP cinnamon
2 tsp baking powder
1/3 cup butter, softened
pinch of salt
1 egg
1/2 cup heavy cream

Glaze

Powdered sugar
Milk

1. Preheat oven to 425.
2. Mix the first 6 ingredients in the bowl of a mixer fitted with the paddle attachment (if you don't have one, you could certainly do this by hand in a bowl with a wooden spoon; it will just take a little longer). Mix on LOW until ingredients are incorporated and form a pasty dough, about 1 minute.
3. Add the wet ingredients (egg and cream), and mix another 30 seconds on LOW until the dough forms.
4. Dump dough on counter and knead 3-4 times to finish forming. Separate into 8 triangles (cut like a pizza) or round (with a biscuit cutter).
5. Bake 10-12 minutes at 425.
6. While the scones bake, mix powdered sugar and milk to desired consistency. When scones are cooled, drizzle over the scones (I keep applying the glaze in layers until I run out).
